Health care costs are probably going to rise more.  Last week’s news was that second- and fifth-largest health insurers are trying to merge reducing major insurers from five to three.   Reduction of competition is rarely good for consumers.

More news was that a powerful new cholesterol-lowering medicine is being priced at $14,600 a year and because it will be used by millions could lead to a  $100 billion-a-year national tab for the US.

How can we fight health cost problems like this?

One answer to rising health care costs lies in a quote from Mahatma Ghandi, “Our greatness lies not so much in being able to remake the world as in being to remake ourselves”.

There is evidence of  this powerful truth in an article “The Mind-Boggling Benefits of the Placebo Effect” (1) at Healthspa.com.

This article shows how the placebo effect works so well that  researchers have to use double-blind studies just to shut the healing impact down.

The article asks “Why isn’t the placebo effect taken seriously?”   There is no dispute over its therapeutic benefit.  A study published by the American Psychological Association, found that 82% of the effectiveness of antidepressants was attributed to the placebo.  Details released by the FDA showed that more than half of six leading antidepressants were out-performed by the placebo effect in studies.

The placebo effect has been dismissed because there has not been enough focus on the actual physical change that it creates.  Now studies have found that placebo groups in studies have measurable changes in the prefrontal cortex in the brain.  A technique developed by UCLA called “Cordance”, measures regional brain activity and shows that the placebo effect makes structural changes in the brain which can help create permanent health benefits.

Big business is not likely to help us with this because of the profit motive.  Why would any company focus on helping people heal themselves free or at a low cost when they can charge $14,600 a year instead?

What To Do

Science confirms that there is a way to create the Placebo Effect by working on the principles studied in Epigenetics.

An article at the website of the US National Library of Medicine – National Institutes of Health entitled “Epigenetics: The Science of the Future” (2) explains how  Epigenetic scientists (the prefix “epi” means above—as in “above the genes) are now documenting how anyone can use epigenetics to “rewrite” the way their genes express themselves.

This can alter the body, alter the way we process information, even create spontaneous remission from serious disease.

The idea behind the power of epigenetics is that it is possible to create a deliberate channel of communication with your DNA through spoken words, phrases and frequencies.  In short you deactivate bad genes and reinforce good genes.

One epigenetic study had trained subjects focus their feelings on their DNA that was sealed in a tube.  When negative emotions were thought, the DNA wind more tightly.  Feelings of love and appreciation caused the DNA strands to unwind and exhibit positive changes.

Sound, or frequency has DNA altering qualities.

A Russian study suggests that DNA can be reprogrammed by human speech.  The experiment used words and phrases spoken and modulated on specific frequencies.  They successfully repaired damaged DNA and reprogrammed human genes. These findings are being applied in some European academic hospitals on various skin cancers.

The Biology of Belief.

There is a great book “Biology of Belief” (3) by Doctor Bruce H. Lipton, Lipton that looks at how  you can “rewrite” the way your genes express themselves.  You can even cause cancer cells (or any abnormal or mutated cells) to act like normal human cells.

One example is that Dr. Lipton took sick cancer cells from a sick body, and transferred them to healthy environments.  The cell recovered and behaved normally.

This is import modern scientific research, but the ancients understood the positive power of thought and sound, hence the concepts of chants, mantra  and sutra that have been used to create health and wealth through change generated within instead of without.

Benefits of Omega 3

Omega 3 is important for longevity and good natural health.

Research has shown that high Omega-3 Index values are related to slow rates of “cellular aging.”

In the USA and European Union, the average Omega-3 Index is 4-5%.

In Japan, the average diet is high in Omega-3 and the average Omega-3 Index is 9.5%.

In the USA, sudden cardiac death rates are about 20 times HIGHER than they are in Japan.

The importance of measuring your Omega-3 Index:

In one study, the Omega-3 index was measured in 704 individuals, some were taking fish oil supplementation and some were not. Only 1% of the group not taking fish oil had an Omega-3 Index  of 8%.

However, in the group that was taking fish oil, only 17% had an Omega-3 Index above 8%.

83% of people in the study taking fish oil were NOT getting to goal!!!

Common fish oils don’t always supplement enough Omega 3.

Overall health can improve with a healthy omega index.  Heart disease is one area where omega-3s are known to benefit.  But there is also the fact that a healthy omega score slows down telomere reduction and cellular aging, limits cognitive decline and helps hold off Alzheimer’s and reduces overall inflammation levels in the body (thereby improving joint pain).

Health Care Savings II


Last Friday’s message Alternative Health Care Costs looked at the high cost of Western medicine and the need for alternatives.

Here is an alternative food that is inexpensive, delicious and can be prepared in many ways…

Quinoa…the superfood….here above: quinoa pancakes and quinoa strawberry shortcake.  (See the recipe for both below.)

The economic downturn is making this problem of high health care costs worse.  This is why we are sharing a delicious way to beat high health care costs below.

The December 2011 New York Times article “Nowhere to Go, Patients Linger in Hospitals, at a High Cost” by Sam Roberts shows one reason how health care supply and demand differs from most products and services.  Here is an excerpt:  Hundreds of patients have been languishing for months or even years in New York City hospitals, despite being well enough to be sent home or to nursing centers for less-expensive care, because they are illegal immigrants or lack sufficient insurance or appropriate housing.

As a result, hospitals are absorbing the bill for millions of dollars in unreimbursed expenses annually while the patients, trapped in bureaucratic limbo, are sometimes deprived of services that could be provided elsewhere at a small fraction of the cost.

Medicaid often pays for emergency care for illegal immigrants, but not for continuing care, and many hospitals in places with large concentrations of illegal immigrants, like Texas, California and Florida, face the quandary of where to send patients well enough to leave.

One patient, a former hospital technician from Queens, has lived at the city’s Coler-Goldwater Specialty Hospital and Nursing Facility on Roosevelt Island for 13 years because the hospital has no place to send him, Ms. Brown said.

Five years ago, Yu Kang Fu, 58, who lived in Flushing, Queens, and was a cook at a Chinese restaurant in New Jersey, was dropped off by his boss at New York Downtown Hospital, a private institution in Manhattan, complaining of a severe headache. Mr. Yu was admitted to the intensive-care unit with a stroke.

Within days, he was well enough for hospital personnel to begin planning for his release, but as an illegal immigrant (he had overstayed a work visa a decade ago), he was ineligible for health benefits. And no nursing home or rehabilitation center would take him. Neither would his son in China nor the Chinese government, although the hospital volunteered to fly him there at its expense.  Yu remained in the hospital for over four years.

Health professionals refer to them as “permanent patients,” trussed in red tape and essentially living in hospitals already operating on thin margins. In some cases, health care professionals say, grown children leave ailing parents at the hospitals and go on vacation. Officials call that practice a “pop drop.”

In the normal course of business if a customer cannot pay he cannot have the product or service.  Health care is different so the costs of those who cannot pay must be absorbed by those who can.  In difficult economic times the number of those who cannot pay rises which increases the health care costs of even those who struggle.

This is one reason why… along with the new health care plan Health insurance rose 9% in 2011.  This is also why even though other prices may stagnate… health care costs are likely to continue this upwards trend.

History suggests that all great societies move through a bell shaped curve.  They struggle in infancy… have their golden era and then sift into decline.

In the decline the establishment usually falter in at least seven key areas.

What more need I say?

This does not mean we have to suffer. The Roman empire disintegrated more than millennium ago… yet Italy is still a great place to live and offers enormous opportunity for many.

We in the West have been in the past 70 years being in exactly the right place at the right time.  We have lived in a wonderful golden era.  Yet one cannot depend on this always and being aware of the reality in circumstances and adapting are equally important to choosing a place to be.

One current reality in the West… especially the USA is that health care has lost its edge and costs have skyrocketed beyond the ability of many to pay.  The current litigious legal framework… the current legislation and regulation… faltering economy and aging demographics suggest that the cost of health care will continue to soar… it is wise to find alternatives.

The best alternative to rising health care costs is good health.   Lifestyle shifts are the easiest way to attain better health and the most important place to start is with nutrition.

This is why we love quinoa.

The Western nutritional template is high glycemic.  We in the West are bombarded with food (and ads that lead us to them) that encourage hyperglycemia.  This fits nicely with a profitable economic model for food processing companies.  Starchy, sugary foods are typically inexpensive and they are addictive.  Our brain is smart. It wants lots of glucose. When we give it to the brain it becomes habituated and learns how to create chemistry so that our body demands more fast burning carbs.

One has to work hard in the West to avoid a high glucose diet.  Most stores and restaurants favor high glycemic food.   In short one has to go out of the way to avoid habit forming nutritional traps that a huge chunk of daily commerce is using to capture us.  The three main food groups of the West are sugar, grease and flour… liberally doused with caffeine!

This is even harder for those with Gluten intolerance as well.  One reader wrote about the article: Gary, Great info today.  Can’t wait to try quinoa, as I’m one of those gluten casualties, which makes it hard to get bulk in my diet.   People in the US are killing themselves with their diets…even farm-fresh veggies have so much pesticides in them that they are unhealthy.  Now farmers don’t have to plow under their crops as there is a chemical that dissolves them.  That can’t be healthy as it becomes part of the soil.

Quinoa is a weapon we can use to beat  the high glucose attack.  The ideal combination in the human diet is about three parts slow burning carb… two parts protein and one part fat. Most modern foods throw this off because fast buring carbs are cheap to produce… and create a demand to eat more and are habituating.  Protein is expensive to produce and satisfies so we eat less. That’s good for the person but bad for the food business and most big food businesses are more interested in profits than their customers health.

Quinoa can replace flour… rice and corn… the holy trinity in the armory of the food producers glucose attack!  Quinoa can also be used to replace cereals and pasta.

Merri used a quinoa dressing this past Thanksgiving turning the turkey stuffing from a glucose bomb into a protein treat.  On New Year’s Day we always follow a southern tradition to have the simplest of meals… black eyed peas… greens and corn bread.   According to southern custom, this brings prosperity for the year.

This year Merri made quinoa bread instead of corn bread. It was delicious and made this a much more balanced meal.

Since I have a sweet tooth I use quinoa to allow me to be naughty… but nice.  Here is a reprint of how I do that with my nutritional nemisis, the occasional pancake… and more.

First  Merri shares here a recipe for quinoa cornbread.

2 cups of quinoa flakes (or I just blend uncooked quinoa for 3 minutes or so)

1 1/3 cups of milk (goat’s milk is also excellent)

1/4 cup excellent quality oil

1/2 tsp. of baking powder

2 eggs

Stir together and bake in a pie dish for 20 minutes at 350 degrees (or until brown on top). 

Quinoa is healthy, packed with protein and omega 3.

Let me begin though by explaining my love affair with pancakes… then why quinoa pancakes and shortcake can add a huge improvement in the Western diet.

Some memories are never forgotten. Some of them quite odd, such as my recollection of when I fell in love with pancakes.

The place was Tillamook, Oregon… a town famous for its cheddar cheese but I doubt famous for its pancakes.  The time…  almost 47 years ago. I must have been around 16 because I had driven with several of my teenage friends to spend the weekend in Seaside, Oregon… the place, in the 1960s, where teenagers from Portland went to hang out.

Action by the way in those days amounted to bumper cars, Ferris wheels and stuff like cotton candy.  There wasn’t much in those days… though if we could have found some we would have imbibed in beer…  as terrible as it tasted to a 16 year old… drinking beer was considered cool then.  Of course for teenage guys… there were also teenage girls.  I think there was a beach and an ocean there too!

Four or five us… high school buddies wandered on weekends…. usually camping out…. sometimes in the Cascades… other times over in the Eastern Oregon desert… shooting our .22s… fishing,.. swimming in lakes and in general just messing around.

Somehow this one memory from many weekends has me in a “mom and pop” restaurant… in Tillamook.   We stopped for breakfast on a Sunday morning… headed back from Seaside to Portland.   I ordered a stack of pancakes… probably a short stack since one thing I really remember  was that we were almost always short of cash.  Back then coffee was a dime a cup (with refills)… gas 19.9 cents a gallon and a short stack… maybe .65 cents.  Camping then in state parks was free.   However we were still usually broke. However with five bucks each, the four of us could do some damage.  One of the friends… Mark Johnson… had a beat up, rusting 1956 Ford station wagon (we called it the Blue Goose) so if we each pitched in a dollar… there was enough for the gallons of gas (and the several quarts of oil)  required to get us to the coast and back.

I recall nothing about the trip… not the beach… not the girls… not even the restaurant… except my awareness on that day of how much I loved those pancakes!  The love affair stuck.

With this story as a background it will not seem odd that when Merri and I lived in London we sometimes visited one of the most renowned pancake restaurants there called, My Old Dutch, which offers authentic Pannekoek (that’s a traditional Dutch pancake).   The kids loved the friendly, bubbly atmosphere and I of course loved… the pancakes offered in both sweet and savory form.

There are crazy combinations at My Old Dutch… chicken curry pancakes… chili con carne pancakes and lamb stew pancakes.  I personally preferred one of the sweet ones served with a caramel sauce.  But note the common connection here… pancakes!

Now comes the rub. Pancakes are a truly unhealthy food… especially when loaded up with artificial sugary syrup. A big platter of pancakes and syrup is a fast burning carbohydrate disaster almost guaranteed to shoot blood sugar up!   This can create all forms of health complications if consumed often enough.  A platter is probably even worse when no sugar syrup contaminated with artificial sweeteners is applied.

I rue the day I discovered this… like learning that your lover is really only there to kill you (perhaps for the insurance).

Alas… chocolate pancakes… with the wrong chocolate… is nutritionally even worse!

What a dilemma … being in love with something that is really bad.

However I know there is a God because… He allowed me to discover quinoa pancakes.

Quinoa is a high protein grain from the Andes that is normally eaten as a cereal.  Quinoa can be ground into flour.  Quinoa flour changes everything when it comes to nutrition in pancakes… the lover is reformed!

Having spent this time explaining pancakes in my epicurian heart… the story on my other food mistress chocolate, we must pass.   Let’s just compare pancakes and chocolate to wine & rose… man & woman… the heaven & the stars.

First, quinoa is high in protein… one of the only vegetable sources of a complete protein.

Second, quinoa has a fair amount of omega 3 essential fatty acids.

(If you have not read much about Omega 3… you should because there is a growing amount of evidence that an imbalance in the Western between Omega 3 and Omega 6  is leading to all types of problems including obesity.)

The excerpt below from a May 2010 Economist article “Diet and the evolution of the brain-Fish and no chips” gives us some insights on this when it says:
The wonders of docosahexaenoic acid

TO PIN one big evolutionary shift on a particular molecule is ambitious. To pin two on it is truly audacious. Yet doing so was just one of the ideas floating around at “A Celebration of DHA” in London this week. The celebration in question was a scientific meeting, rather than a festival. It was definitely, however, a love-in. It was held on May 26th and 27th at the Royal Society of Medicine to discuss the many virtues of docosahexaenoic acid, the most important of that fashionable class of dietary chemicals, the omega-3 fatty acids.

DHA is a component of brains, particularly the synaptic junctions between nerve cells, and its displacement from modern diets by the omega-6 acids in cooking oils such as soya, maize and rape is a cause of worry. Many researchers think this shift—and the change in brain chemistry that it causes—explains the growth in recent times of depression, manic-depression, memory loss, schizophrenia and attention-deficit disorder. It may also be responsible for rising levels of obesity and thus the heart disease which often accompanies being overweight.

Michael Crawford, a researcher at the Institute of Brain Chemistry and Human Nutrition in London, believes, however, that DHA is even more important than that.

He suggests that it was responsible for the existence of nervous systems in the first place, and that access to large quantities of the stuff was what permitted the evolution of big brains in mankind’s more recent ancestors.

Indeed, Dr Crawford thinks that a shortage of DHA is a long-term evolutionary theme. The molecule is most famously found in fatty fish. He suggests this might explain why, for example, dolphins have brains that weigh 1.8kg whereas zebra brains weigh only 350g, even though the two species have similar body sizes. Furthermore, he argues that the dramatic increase of the size of the brains of humanity’s ancestors that happened about 6m years ago was not because apes came out of the trees to hunt on the savannahs, but because they arrived at the coast and found a ready supply of DHA in fish.

Accept no substitute

Joseph Hibbeln, a researcher at America’s National Institutes of Health, has been looking at the supply to babies of DHA from breast milk and at genetic variation in the ability to produce this molecule from other omega-3s.  In the case of those fed on formula milk low in DHA, though, children without the DHA-making ability had an average IQ 7.8 points lower than those with it.

Nor is intelligence the only thing affected by a lack of DHA. There is also a body of data linking omega-3 deficiencies to violent behaviour. Countries whose citizens eat more fish (which is rich in DHA) are less prone to depression, suicide and murder. And new research by Dr Hibbeln shows that low levels of DHA are a risk factor for suicide among American servicemen and women. Actual suicides had significantly lower levels of DHA in the most recent routine blood sample taken before they killed themselves than did comparable personnel who remained alive.

More worryingly, 95% of American troops have DHA levels that these results suggest put them at risk of suicide.

America’s department of defence has taken note. It will soon unveil a programme to supplement the diets of soldiers with omega-3s. The country’s Food and Drug Administration may change one of its policies, too. Thomas Brenna, a professor of nutrition at Cornell University, has written a letter (co-signed by many of the scientists at the meeting) urging the agency to revise its advice to pregnant and fertile women that they limit their consumption of fish.

They may, however, be swimming against the tide. The popularity of omega-6-rich foods based on cheap vegetable oils will be difficult to reverse. Indeed, if another of Dr Hibbeln’s studies proves true of people as well as rodents, it may be self-fulfilling.

In this experiment he fed rats diets that were identical except that in one case 8% of the calories came from linoleic acid (an omega-6 fatty acid) while in the other that value was 1%. These percentages reflect the shift in the proportion of omega-6s in the American diet between 1909 and the early 21st century.

In the 8% diet, levels of rat obesity doubled. It turns out that in rats (and also in humans) linoleic acid is converted into molecules called endocannabinoids that trigger appetite. Those who eat omega-6s, in other words, want to eat more food.

And since, in the human case, omega-6-rich food is much cheaper than omega-3-rich food, that is what they are likely to consume.

The way out of this vicious circle is not obvious. Eating fish is all very well, but the oceans are under enough pressure as it is.

Quinoa, a 5000 + year old grain from the Andes is full of essential amino acids, iron and vitamins. It is probably the best protein source from the plant kingdom and has a delicious delicate nutty taste ideal.

Rich in omega-3 fatty acids, quinoa offers benefits to the heart and is easy to digest as well.

Quinoa has been rated by the WHO as possessing protein of a quality similar to milk. It has been classified as a supercrop by the United Nations on account of its nutritional value and high protein content. 

In early times, quinoa was cooked and ground to a paste and applied on bruises. Its medicinal uses ranged from treating motion sickness and appendicitis to bone problems and nursing mothers.  In fact a poultice of quinoa flour was applied on broken bones. It is a good source of dietary fiber.  Quinoa is ideal for those suffering from allergies to the grass family since it is a leafy grain and is gluten-free.

Quinoa is also a source of phosphorus, magnesium, zinc, copper and manganese, Vitamins B6, Niacin and Thiamin and has high levels of lysine – an essential amino acid for creating protein. Plus it is low in fat and excellent source of complex carbohydrates.

Most Westerners need to be getting more Omega 3 and less Omega 6 and quinoa can help… plus it can be cooked in some really delicious forms.

“Well, one of the problems that most of us have is Strawberries (yes!) but then we go a bit further and want Strawberry Shortcake.  Gary always steers me near those horrible little cakes when he has just been to the farmer’s market and bought luscious strawberries.  So, all I do when making almost anything with flour is to simply substitute fine ground (we do it ourselves in our blender) quinoa for flour.  However, this does change 1)the consistency of the batter (perhaps one needs to add more liquid) and 2)makes a firmer, stronger product no light and fluffy quinoa here! This might require a bit of change of expectations if one desires those little light airy concoctions…but think PROTEIN and low CARBS.

“Strawberry Quinoa Shortcakes:

“1 cup quinoa flour,  1/2-3/4 tbs. baking powder, a tiny bit of all natural sugar (to your taste), 7 tbs. of butter (or a good oil) cut into pieces, 1 egg, 1/2 – 3/4 cup of rich milk (perhaps half and half).  Strawberries & Cream to add on top.

“Cut butter into the dry mixture.  Mix egg with rich milk and combine with dry ingredients.  Bake 12 minutes or so until golden brown at 350.

“Serve with strawberries and of course cream or whipped cream!”  Merri

How The Course Works

The first tactic is to use Baroque music in the learning process.  At least three best selling books, “Superlearning”, the “Mozart Effect” and “Superlearning 2000” have revealed insights about how to learn and think more powerfully based on systems drawn from the Bulgarian educational master, Dr. Georgi Lozanov.  Merri Scott was among just a few who learned directly from Lozanov.
