When the seasons change, it is time to think about John Douillard’s book on nutrition, “Three Season Diet”.  (See link below).

John is one of the physicians who has made more difference in Merri’s and my lives than any other. I have enjoyed three of his courses, one on pulse therapy, one on quantum exercise and one on quantum nutrition.

What we learned from John has helped us sustain a high level of energy.   Merri and I are well past retirement age yet we just started our biggest business expansion yet.

Why would we do this if we don’t need the money and don’t need the work?  Simply put we are so filled with energy and ideas and creativity that we don’t even think about being in our seventies.  Age does not even seem to mean anything to us.

Part of our energy comes from our nutritional habits so this message is about how to change our nutrition in the Spring.

“Three Season Diet” shows how to lose weight, increase health and vitality by eating different foods at different times of the year. The concept is based partly on Ayurved, the Indian science of life and well being, which views the body as having three essences; vata (essence of motion), pitta (essence of transformation-digestion) and kapha (essence of solidity). These essences are also described as vata-air, pitta, fire and kapha, earth/water.  A key in Ayurved is to keep the three in balance.

Ayurved also recognizes differences in seasons. Spring, being a moist, fertile time of growth of course is a kapha period. Summer, naturally is a time of heat or pitta when the seeds transform into food. Finally, autumn and winter turn windy and cold. Things become brittle and dried, the time of vata. So the tendency in summer is for the fire in us (pitta) to grow excessively, spring brings kapha problems and winter hosts vata imbalances.

This book is an excellent health generator on how to lose weight, beat food cravings and get fit. John has worked on me and I have attended several of his courses including one based around his first book, “Body, Mind and Sport”.  A former professional athlete, John helped train Billy Jean King,  was a consultant to the New Jersey Nets and runs an Ayurvedic and chiropractic sports medicine practice in Boulder, Colorado.

The theme to “Three Season Diet” is that there is a surprising resolution to all the diet gurus with their conflicting nutritional research.  They are all right, but each for only about four months of the year.  The 3 season diet points out that there are three growing seasons, spring, summer and fall. We should have three diets we vary through the year, low calorie-low fat in spring, high carbohydrate in summer and high protein in winter. This creates a food supply that fits the body’s requirements as it shifts to adapt to each of these seasons.

The 3-Season Diet aligns our desires with the foods that nature has provided in season for thousands of years.

In the winter we naturally crave soups, nuts, warm grains, and other high fat and protein foods such as meat and fish.

In the spring we want salads, berries, and leafy greens — a naturally low-fat diet.

And in the summer, when the days are long and hot, we require cooling and high-energy foods such as fruits and vegetables, which are a naturally available high carbohydrate diet.

There are many similarities between the Ayurvedic and Andean nutritional sciences.

The cornerstones of Andean nutrition are:

#1: Eating a balance of fat, carbohydrates and protein.

#2: Eating a combination of food for ideal digestion.

#3: Eating clean organic food prepared and served by happy, joyful people.

#4: Eating in good spirits at the right times.

#5: Chewing in the correct way.

#6: Eating purifying and satisfying meals.

#7: Balancing nutrition with correct sleep and exercise.

Here is what we will review about nutrition:

#1: Eating a balance of fat, carbohydrates and protein.

Our diet keeps protein balance without excessive amounts of meat using quinoa, eggs, goat and natural cheese and yoghurt instead. A great deal of poor health and stress is tied in to the underlying hormonal disturbance caused by the excess production of insulin. This imbalance normally comes from too much food and incorrect protein, carbohydrate, fat balances in the diet. Every time we eat, hormones in our body will change, either good or bad. Delicious food with a balance of 3 parts carbohydrates, two parts protein and one part fat has the power to orchestrate beneficial hormonal changes in our body.

#2: Eating the correct combinations of food for ideal digestion.

Andean nutritional ideals also focus on combining foods in a way that avoid fermentation in the stomach. Foods and spices are divided into three types neutral, savory and sweet. Neutral can be mixed with savory or sweet, but no savory and sweet foods are mixed. The main neutral foods are grains, cereals, nuts and seeds. Meat and most vegetables are savory. Fruits are sweet. Cereals are ground and soaked to improve their digestibility. Sweet spices include cinnamon, nutmeg, allspice, ginger, mint. Savory spices include sale, pepper, chiles, oregano, coriander, bay leaf, cumin, saffron, fennel. No two fats are mixed nor are fruit types.

#3 & 4: Eating clean organic food prepared and served by happy, joyful people and eat in good spirits at the right times. Food should be beautiful as well…like this quinoa-feta salad we often enjoy.

Candace Pert, Ph.D., is a neuroscientist well known for her groundbreaking work that shows the mind is not just in the brain but in the entire body. The mind and body communicate using the chemistry of emotion. Short chains of amino acids called peptides and receptors are found in the brain, stomach, muscles, glands and all major organs. They send messages back and forth linking mind and body. When we are happy our entire body is happy and reverse and this chemistry has a dramatic impact on our food and digestion.

Andean beliefs view the body composed of three elements earth (Pacha Mama), fire (Taita Inti) and air, Pacha Kuti.

There are times of the day when each of these elements are most active. The digestive fires are highest at 12 noon, so a savory meal is normally eaten at this time.

A sweet breakfast accommodates a more sluggish digestive time and the evening is set aside for a purifying fruit meal so the body can use the midnight fire energy to cleanse rather than digest.

Three herbal teas are served. In the morning cinnamon tea is served. Before lunch ginger tea lights the digestive fires and before sleep chamomile tea enhances a good night’s rest.

Part of good nutrition comes from eating, sleeping and exercising at the correct times.

The yatchaks also suggest we eat only when hungry and the stomach is empty so we recommend eating only every four hours. For cravings between herbal tea is best and juices can be added if it is uncomfortable to wait for the next meal.

#5: Chewing in the correct way.

Correct chewing releases nutrient molecules so energy from food is more quickly released and assimilated. This allows the brain to recognize flavors and release the correct digestive juices for that food. Proper chewing does even more because it stimulates the bodies sphincter (or ring) muscles that surround the various orifices of the body.

Ring muscles include the muscles around the eyes, the nostrils, anus, urethra, genitals and the mouth. In a healthy body, all sphincters work together, contracting and relaxing simultaneously. They also activate the respiratory system, the gastrointestinal system, the circulatory system, the lymphatic system, the musculoskeletal system and the urogenital system. Ring muscles are ultimately responsible for putting all the other muscles and all the organs of the body to work.

Chewing correctly stimulates the ring muscles and consequently helps exercise all our muscles.

#6: Eating purifying and satisfying meals.

Fruit types also exist and are never mixed. Citrus stands together, but is not mixed with other foods. Watery fruits (apples pears, plums and grapes) can be mixed. Bananas are eaten alone only or with dairy only..never with any grains. Pineapple and melons are also eaten alone.

There are three purifying meals we will learn about during the course. The first most gentle purifier is a water combination of apples and grapes. The second meal is an entire pineapple and the third, an entire watermelon.

Organic coffee, tea and cocoa are great purifiers rich in antioxidants. Coffee and some tea is avoided by those who do not want caffeine. We recommend moderation and serve only organic, fair trade coffee and tea Coffee and tea (without milk) are neutral and can be consumed before or with any meal.

#7: Balancing nutrition with exercise and sleep.

Each day you can learn a gentle but profound exercise that will enhance your stress release. We do not have television at the farm and recommend going to bed before the evening fore cycle begins at 10 PM. The farm is totally quiet and dark for more restful sleep.

About Omega 3

Jim Vigue spoke at our last Super Thinking seminar.  He is a member of the American Academy of Anti-Aging Medicine and the American Association of Drugless Practitioners and is board certified in alternative medicine and has a Ph.D. in holistic health.

Dr. Jim told us:  Our research shows that people who have the highest Omega-3 Index values appear to have the slowest rates of “cellular aging.”

Dr. Jim then outlined how Omega 3s may be doing more than just helping longevity.

He wrote: If I could only take one supplement it would be a good omega 3 product.

When we designed our product we included vitamin D, the super anti oxidant astaxanthin  and a proprietary anti oxidant blend along with the krill oil and calamarine oil.

She concludes:   “Before long, your personal Omega-3 Index just could he the new cholesterol – the number you want to brag about.”   Omega-3 content in red blood cells is a strong predictor cardiovascular disease.

Low levels of Omega-3 fatty acids are associated with higher rates of:

* Heart Disease, including:

* Sudden Cardiac Death (Primary Cardiac Arrest)

* Mortality from Congestive Heart Failure

* Mortality after heart attack

*2nd Heart Attack

* 1 st Heart Attack in those with High Triglycerides/Low HDL 2nd Stroke Cellular Aging

* Depression (Major Depressive Disorder) Dementia/Alzheimer’s Disease, Inflammation ,Chronic Joint Swelling, Headaches, Prostate cancer.

In the USA and European Union, the average Omega-3 Index is 4-5%.

In Japan, the average diet is high in Omega-3 and the average Omega-3 Index is 9.5%.

In the USA, sudden cardiac death rates are about 20 times HIGHER than they are in Japan.

The importance of measuring your Omega-3 Index:

In one study, the Omega-3 index was measured in 704 individuals, some were taking fish oil supplementation and some were not. Only 1% of the group not taking fish oil had an Omega-3 Index  8%.

However, in the group that was taking fish oil, only 17% had an Omega-3 Index above 8%.

83% of people in the study taking fish oil were NOT getting to goal!!!

Dr. Jim said this simple fact that many common fish oils weren’t doing the job led him to develop his own high quality product. Initially designed for athletes but really for any active person.

A Supertarian is someone who:

1. Has a vitamin D level over 50
2. Has an omega index over 8.
3. Has a glucose level under 90
4. Has balanced hormones

He believes that anyone who can achieved this status will have a good chance of avoiding or at the bare minimum postponing the major diseases of aging.

Dr. Jim designs natural products for his own companies and others. He has one 15 year old line of supplements that he markets exclusively to doctors and clinics. He also designs and develops products for other companies. He has just introduced his new Athlete’s Best line.

But there is also the fact that a healthy omega score slows down telomere reduction and cellular aging, limits cognitive decline and helps hold off Alzheimer’s and reduces overall inflammation levels in the body(thereby improving joint pain).

How this Course Works in Just Three Days.

A Livescience.com article helps explain why this course works and how delegates are creating Spanish sentences by the first lunch break and can communicate well in Spanish after just three days.  This article by Jeremy Hsu, LiveScience Senior Writer, is entitled “CIA Seeks Anyone, Anyone Who Can Speak 2 Languages.”

Four important points in the article are shown in excerpts below with my comments to show what has been wrong with traditional Spanish courses and why the Super Thinking tactic is perfect for this program.

The article begins: WASHINGTON, D.C. — Many Americans don’t learn a second or a third language from birth, let alone a language that the CIA or U.S. Foreign Service might want. The situation has forced U.S. government agencies to learn how to cultivate the most talented second-language speakers from among college students with little to no other-language expertise.

“In U.S. education, we don’t develop early bilinguals,” said Catherine Doughty, a language expert at the University of Maryland.

Doughty spoke as part of a panel during the American Association for the Advancement of Science (AAAS) conference in Washington, D.C.

She and other speakers described the typical U.S. second-language program as being a series of disjointed classes where students often repeated what they had learned before.

“Imagine math [programs] where the middle school says, ‘We don’t have any idea about what you studied,’ so you learn it again. It’s the same with high school,” said Robert O. Slater, director of the U.S. National Security Education Program.

MY COMMENT.  This is why traditional Spanish courses often do not work.  They create two obstacles up front…conjugation and  memorization of vocabulary.  Super Thinking + Spanish avoids both these obstacles.

The article continues:  Finding the best.  Government agencies aren’t alone in trying to recruit multilingual speakers; U.S. corporations covet such skills for doing business in the era of globalization.

MY COMMENT:  This is why speaking Spanish adds value to each of us as a person.  We become especially useful in an increasingly global multilingual society.

The article explained how Doughty and her colleagues used tests to train up cognitive processes related to language learning, such as the ability to hold information in the brain while using it for learning.  The tests sought to predict those who can succeed despite everything stacked against them.

The article reviewed changes in the brain.  Lee Osterhout is a cognitive neuroscientist at the University of Washington in Seattle.  His lab used electrodes placed on the scalp to measure the electrical activity created by the signals of brain cells.  That allowed the researchers to see differences in the brain patterns among language learners and fluent speakers.  They found some surprising results:

The article pointed out:  Repeated studies of French language students showed that their brains responded differently to real French words compared with fake words after just two weeks of classes, even if the students themselves could not tell such words apart.   

“From knowing nothing to a little bit, [there are] huge changes in the brain,” Osterhout pointed out.  “[From] knowing a little to knowing a lot, [it is] much more subtle.”

MY COMMENT: This is why Super Thinking + Spanish works.   The three day course focus is entirely on making the huge change and ignores the subtle.  From there the perfection and subtle change.  The three day course prepares the learner to speak Spanish immediately and then make the subtle changes in their day to day life.

The article also said:  Another surprise came from studies of Spanish-speaking immigrants, because neither age nor language proficiency seemed to predict how quickly the immigrants picked up English.  Instead, the fastest learners showed both the greatest motivation to learn and a willingness to use English at every opportunity despite being bad at it (at first).

There you have it.  How long did it take you to read the sentence? You now know hundreds of Spanish words that you will never forget.

The next lesson teaches how to pronounce each of the nouns.

The fourth lesson shows how to avoid conjugating verbs by sticking with the infinitive (far easier than it sounds).  This simple lesson leaves a person sounding like a Spanish professor without ever conjugating a verb.

Lesson five shows how to sound infinitely polite and yet get almost anything desired in Spanish.

Lesson six gives valuable connectors and the seventh lesson triples the Spanish capacity with three words for “yesterday,” “now” and “tomorrow”.

By the end of three days you feel comfortable speaking Spanish.

I was amazed by this as I traveled back and forth from the USA to Ecuador.  The longer I was away from Ecuador… the better my Spanish became. My second language was automatically improving The self improving feature comes because you learn to create Spanish sentences rather than remember them.  The portion of the brain that creates is more powerful than the portion that recalls.   When your mind creates something… it owns it!  You do not have to remember .

During the course you learn 4005 Spanish words that you already know .  

You then learn how to create Spanish sentences from these words.

Throughout the course you learn how to pronounce the sentences you create.

I recently visited Bill Dixon at his Cuenca Inn B&B located at Don Bosco and Santa Maria Streets in Cuenca, Ecuador.  This is Bill’s third project in Cuenca and shows what a beautiful creation he can make.

The Inn itself is in a large home well back from the road.  It has four good sized guest rooms, two with bathroom en suite and TVs.

There is  a wonderful large central covered courtyard with TV, a central fire pit and lots of plants.

There is also a small bar area just off the courtyard  that we all enjoyed.  The Inn is very well appointed and the ambiance is warm and conducive to the comforts of a home away from home.  Internet/WIFI is good and is available to guests for long distance calling, along with pyre-loaded local cell phones.

At the same time I was visiting Bill, Neil and Inge (another retired couple) were there as well. We all enjoyed a great meal and hobnobbed about the state of affairs in North America for about three or four hours while enjoying a couple of bottles of wine.

The Inn has a reasonably sized, fully equipped kitchen where breakfast is prepared. Bill created a superb dinner for us all including South African style BBQ Grilled Chicken with a very tasty vegetable casserole Au Gratin and an appetizer of his own design.  We had somewhat of an argument trying to name.  It consisted of layers of corn chips, peppers, cheese, chilies, some secret ingredients and was served with a wonderfully flavored home made red pepper jelly.  We finally settled on Bill’s Deep Dish Corn Chip Pizza as a name for it.  It was sweet and spicy,  crispy and very well balanced, well received by all, as was the rest of the food.

As I said previously we sat around the fire pit enjoying the conversation and the wine until well past 11 PM.  No one really wanted to leave but Bill had engagements in the morning and eventually we had to call it a day. Since the Inn is at a fairly major cross street we had no trouble hailing a taxi back to Ordonez Lasso where it turned out Neil, Inge and I all lived.

Bill and I had originally met in Oshawa when he attended our Super Thinking / Super Spanish course prior to coming to Cuenca.  He indicated that it had been a really good investment on his part as he had acquired the language basics he needed, and it gave him the confidence to make the change in his location and his life.

He actually attended the Super thinking / Super Spanish course twice about 3 months apart. He says he was amazed at how much of the first course he remembered on the second time around. He really threw his all into the course and got a lot out of both sessions.
