Natural Awakenings to Health With Quinoa Quimbolitos


Natural awakenings to health is hard of you do not have new concepts to replace the old. One of our natural awakenings goals at our restaurant here in Cotacachi, the Quinoa Café, is to help our guests learn how to enjoy high protein meals with less meat. Yesterday everyone really cane naturally awake during the coffee break, Chef Santiago came up with a wonderful Quinoa Quimbolito. This is a steamed banana leaf filled with quinoa, eggs, carrots and an optional bit of chicken. Served with homemade savory salsa. To make, wash quinoa and carrots. Stuff in a banana leaf and steam for 30 minutes. It’s that simple, filling and delicious.
